Brown Sugar Tray Bake

This tray bake is so light and fluffy!

Have it on it's own, or with some yoghurt and fruit for a low fat and low calorie dessert!

 100 g brown sugar
 90 g low fat butter - melted
 2 eggs
 0.50 tsp salt
 2 tsp vanilla extract
 1 tsp baking soda
 190 g plain flour

Preheat the oven to 175C and line 8"x8" baking tray with greaseproof paper.

In a bowl, beat the butter and sugar together with an electric whisk.

Slowly mix in the vanilla and eggs until all is combined.

In a sperate bowl sieve the flour, salt and baking soda, and mix well.

Add your dry ingredients to your wet ingredients and mix well until just combined.

Transfer the batter to the baking tray and bake for 15-20 minutes until the top is golden brown and the cake is cooked through.

Cut into 16 equal pieces and enjoy!
