 1 egg white
 0.25 tsp lemon juice
 1 tsp vanilla extract
 food colouring
 50 g granulated sugar

Preheat the oven to 100C and line a baking tray with parchment paper.

In a glass bowl, mix the egg whites until they are frothy.

Add the lemon juice and continue mixing until soft peaks form.

Add the sugar in slowly and continue mixing until fully formed peaks appear.

Gently fold in the vanilla extract and food colouring.

Dollop the mixture onto the baking tray into small discs, leaving about 2.5cm between each meringue.

Bake for 90 minutes, then turn off the oven and allow to cool inside the oven.

Dip into low fat yoghurt & enjoy!
