These mini lemon bites are the perfect low calorie and low fat snack!
Have on their own or with some Greek yoghurt for extra protein!

Preheat the oven to 180C and line a loaf tin with greaseproof paper.
In a bowl mix together the yoghurt, lemon juice, vanilla extract and lemon zest.
In a separate bowl sift the remaining ingredients together (not the icing sugar).
Pour your wet ingredients into the dry and mix well.
Pour into the loaf tin and bake for 20-25 minutes until the loaf has risen and is cooked through.
Once cooled, slice into equal sizes, dust with icing sugar or cinnamon and enjoy!
