Vanilla Crinkle Cookies
This recipe is an adaptation to my Christmas inspired crinkle cookies, but for when you're not feeling those Christmassy flavours! Super simple & fool-proof, these have never not worked out!

Start by mixing the sugar, vanilla extract & oil together. Then slowly add in each egg, mixing fully each time.
In a separate large mixing bowl, combine the remaining ingredients (bar the icing sugar), then slowly begin adding in your sugar mixture until a soft dough forms.
Then place in the fridge for an hour to firm up, otherwise tis can get quite messy!
Heat your oven to 190C and line a baking tray with parchment paper.
Pour your icing sugar into a shallow dish or plate. Taking roughly 20g of the mixture, roll it into a ball, then roll in the icing sugar. Place the balls onto the baking trays, making sure they're evenly spaced out (these will spread!)
Bake in the middle of the oven for 10 minutes , then allow to cool on a wire rack - they will firm up!
