Veggie Bean Chilli

This bean chilli is loaded with so much flavour, you won't even notice it's meat-free! Loaded with protein and fibre to keep you feeling fulling for longer.

Serve with rice, or add on top of tortilla chips for some nachos!

 1 can of baked beans (reduced sugar)
 1 large onion
 1 large pepper
 200 g mushrooms - roughly chopped
 200 g frozen mixed veg
 2 garlic clove - minced
 1 beef stock cube
 1 tsp chilli powder
 1 tsp cajun seasoning
 0.50 tsp onion granules
 0.50 tsp basil

Add all the ingredients to s slow cooker and mix well. Cook on low for 4-5 hours.

Alternatively, add all the ingredients to a large pot and cook on low for 2 hours.

Adding water periodically if needed.

Serve with rice or add to tortilla chips for nachos, enjoy!
