 75 g plain flour
 65 g 0% fat Greek yoghurt
 1 tsp baking powder
 1 tsp granulated sweetener
 1 tsp vanilla extract
 20 g strawberry jam

1

Line a baking tray with greaseproof paper and set aside.
Preheat the oven to 180C.

2

To a large mixing bowl add all the ingredients (bar the jam) and mix together.

Once almost combined, tip out onto a floured surface and knead until a soft dough forms. It should be a soft dough with a little bounce, not sticky.

3

Divide the dough into 2, and mould each into a round ball/patty.

4

Place on the baking tray and cook for 15 minutes until risen.

Allow to cool slightly before slicing & topping with your favourite jam!
