 160 g oats - not quick style
 30 g protein powder
 1 tsp baking soda
 80 g low fat butter / spread - softened
 100 g sugar
 1 tsp vanilla extract
 1 egg
 45 g white chocolate chips
 20 g dark chocolate

1

For the white chocolate oats biscuits, preheat your oven to 175C and line two baking sheets with grease-proof paper and set aside.

Blitz half the oats into a flour using a blender.
To a bowl, add the ground and whole oats, protein powder, baking soda and a pinch of salt.

2

In a sperate bowl, add the sugar and softened butter / spread and cream together. Add the egg and vanilla extract and mix until all combined.

Slowly begin adding your wet ingredients to your dry ingredients, mixing as you go.
Gently mix in the chocolate chips.

3

Place 15 even balls of the mixture on the baking trays (they will spread!) and bake for 8-10 minutes until golden in colour.

Remove from the oven and transfer to a wire rack to fully cool.

While the biscuits are cooling, melt your dark chocolate and drizzle over the biscuits.

Enjoy with a tea or coffee!
