Yields2 ServingsCategoryDinner

 130 g brown penne pasta
 400 g chopped tomatoes
 100 g mushrooms - sliced
1 medium white onion - diced
 1 beef stock cube
 10 pepperoni slices
 1 tsp oil
 1 tsp garlic powder
 1 tsp onion powder
 0.50 tsp black pepper
10 g grated low fat cheese

1

Preheat the oven to 1800C.

For the pizza pasta bake, start by cooking your pasta until it's just "al-dente". Usually about 12 minutes.

Heat the oil in a large pan, adding the mushrooms and onions until softened.
Add in the chopped tomatoes, seasonings, and stock cube and allow to come to the boil. Reduce the heat and simmer until the sauce has thickened.

2

Once the sauce has thickened, add in the pasta and give it a good stir, making sure that everything is evenly coated.

I like to use 2 rectangular dish (L18.5 x W13.5 x D5cm) to make 2 portions.

To the bottom of your dish, add a layer of the pasta mixture, followed by a layer of pepperoni slices, repeat until everything is used up.

Top with the cheese and bake for 20 minutes until golden.

Enjoy with a side salad!
