 2 crumpets
 1 egg
 50 ml semi-skimmed milk
 1 tsp vanilla extract
 40 g frozen berries
 optional toppings

Preheat your oven to 180C.

Cut your crumpets in half, creating four semi-circles.

In a separate owl, whisk the egg, milk and vanilla extract until smooth.

Dip each piece of crumpet into the egg mixture, making sure it's completely soaked through, then place in an oven proof dish. You may have egg mixture leftover.
Repeat this for the remaining pieces and top with the frozen fruit and toppings.

Bake in the oven for 15 minutes until the crumpets are golden on top but still fluffy on the inside!

Dig in and enjoy!
