Rice pudding is just one of those classic childhood desserts that always goes down a treat! Something so simple but with some little extras can be so flavourful & delicious!

Add the rice and 300mls of water to a large pot and bring to the boil.
Reduce the heat and allow to simmer for 15 minutes until the water has been absorbed.

Uncover and add the milk, sweetener and salted caramel flavouring and stir.
Allow to simmer for 25 minutes, remembering to stir often until the rice has softened and you've a nice thick sauce.

Allow the rice to cool and then serve with your favourite toppings! I like to grate a little milk chocolate on top, but you could try dried fruits or nuts too!
