Baked Eggs

These spicy baked eggs are easily whipped up on a lazy Sunday for a delicious, low calorie kind of brunch!
As slice of crusty bread goes well with this flavoursome sauce.

 2 eggs
 300 g chopped tomatoes
 2 garlic cloves
 1 tsp smoked paprika
 chopped chilli pepper to taste

Preheat the oven to 180C.

To a bowl, add all of the ingredients except the egg and mix well.

Divide the mixture evenly between 2 small oven-proof dishes, and bake for 20 minutes.

Remove the dishes from the oven, make 1 small gap in each, and crack the egg inside.

Return to the oven and bake for 7-10 minutes until the egg is cooked to your liking.

Serve with crusty bread and enjoy!
