Banana Oat Muffins
The perfect alternative to banana bread when you've got a bunch of leftover bananas around the place! These banana muffins are perfect for prepping ahead of time & grabbing on the go!

Preheat your oven to 180C and line a cupcake tray with liners. Set it aside.
In a large bowl, combine the flour, oats, baking soda, cinnamon, and salt.
In another large bowl, mix the mashed bananas, eggs, honey, olive oil, milk, and vanilla together. Add the dry ingredients and mix until fully combined, but don't overmix! At this point you could add in some chocolate chips or chopped nuts to the mixture!
Divide the mixture equally between the 12 liners & bake for 20-25 minutes (or until a toothpick comes out clean).
