A foul-proof bruschetta recipe, that's full of flavour!
The perfect low calorie side to any Italian dish. Low in calories, but high in anti-oxidants.

 4 slices of garlic bread
 2 medium tomatoes - chopped and drained
 1 spring onion - chopped
 2 garlic cloves - crushed
 1 tsp dried basil
 1 tsp dried oregano
 7 ml balamic vinegar
 0.50 tbsp olive oil

For the bruschetta, add all the ingredients (bar the garlic bread) to a large bowl.
Mix gently to ensure that the tomatoes don't get break up.

Cover with clingfilm and refrigerate for at 2 hours or overnight.

Remove the mixture from the fridge 30 minutes before serving, and allow to come to room temperature.

Toast your garlic bread slices and serve the mixture on the warm bread as a starter or side.
