Buttered Leeks

This buttered leak recipe came about while I was looking for some Christmas side dishes! Anything buttered is a win in our house & the fact that the recipe is so simple is just an added bonus!

 1 large leak (about 1.5KG)
 50 g butter / low fat spread
 1 tsp fresh / dried thyme
 0.50 tsp salt
 0.50 tsp black pepper

Start by cooking your leaks from the top to the root & wash thoroughly with water.
Thinly slice them diagonally (it looks nicer!)

To a large pot add the butter & allow to melt. Add in the leaks & seasoning, coat them evenly in the butter. Reduce the heat & allow them to cook gently, stirring halfway through. The leaks should be soft yet tender.

Serve the leaks alongside your favourite roast & enjoy!
