Carrot & Onion Soup
Warm up on a cold day with this hearty carrot soup. Bright in colour and packed full of nutrients and flavour!
Throw in any leftover veg for a quick and filling lunch that can be batch made and frozen.

Roughly chop the carrots, onions, garlic and celery sticks.
Add the vegetables to a large pot and pour in just enough water to cover them.
Mix in the seasonings and stock cube and mix well.
Heat over medium-high until it comes to the boil, then reduce the heat and allow the vegetables to simmer until cooked through completely.
If you want a thicker consistency soup then drain the vegetables and blend until smooth.
For a thinner soup, simply blend the vegetables with the stock.
Add salt to taste and enjoy!
