Chicken & Bacon Filo Bites

These little chicken & bacon filo bites are the perfect light lunch, when you need something that's high in protein but nothing too stodgy.
This would also make great little nibbles for your next party!

 2 just roll sheets of filo pastry (48x25cm)
 1 medium chicken breast
 3 bacon medallions
 1 spring onion
 100 g ricotta
 1 tsp dill
 1 tsp black pepper
 0.50 tsp salt

Start by chopping the chicken and bacon into small cubes.

Place a large non-stick pan over medium heat, add the meat and fry off until cooked through.

Transfer to a mixing bowl and set aside.

Preheat the oven to 180C.

Cut the filo pastry into small squares.
Taking a muffin tin, place three squares of pastry at the bottom of the tin forming a star shape.

Continue until the 12 cases have been filled.

Add the remaining ingredients to the chicken and bacon, and mix well.

Place 1-2 tsp of the mixture into each pastry case.

Bake in the oven for 12 minutes, until the filling is warm and the pastry is crispy.

Serve warm and enjoy!
