Chicken Fillet Burger
These chicken burgers are a regular dinner in my house. They pack a punch with the flavour and have a decent amount of protein in each!
I have tried coating the chicken in breadcrumbs, as well as cornflakes and both are equally good. Just depends on how crunchy you want it!

In a food processor/blender, gently mix the cornflakes and seasoning together.
Alternatively, combine in a bowl by hand and gently crush.
You don't want to break them down so much that there is no crunch left!
Preheat the oven to 180C and line a baking tray with parchment paper.
Whisk the egg and set aside. Then dip the chicken breast into the egg mixture, and then coat in the cornflakes, ensuring it is fully coated all over.
Heat a non-stick pan on medium-high and crisp the chicken breasts on each side to get that "fried" texture.
Transfer to the prepared baking tray and cook for 30-40 minutes or until cooked through and golden.
For the final 3 minutes, top the chicken with the sliced cheese and return to the oven to melt.
Remove from the oven and place onto the buns.
Then add your favourite burger toppings and serve!
Personally, lettuce, tomato and coleslaw is the perfect combination!
