110 g low fat spread / butter alternative - melted
 170 g castor sugar
 2 medium eggs
 3 tsp vanilla extract
 65 g self-raising flour
 40 g cocoa powder
 1 pinch of salt

1

Preheat the oven to 180C, and line an 8" square baking tray with parchment paper.

2

Combine the melted butter with sugar and mix until the sugar is dissolved.

Add in the eggs and vanilla extract and beat until light in colour.

3

Sift in the flour, cocoa powder and salt. Gently fold them into the mixture.

Be careful not to over mix here, but still ensure that all the flour/cocoa powder is incorporated.

4

Pour your mixture into the pre=prepared baking tray and bake for 20-25 minutes.

I've found the best timing is 22.5 minutes!

5

Leave to cool in the tray and then cut into 12 equal pieces. Transfer to a cooling rack to continue cooling.

Sprinkle with icing sugar and enjoy!
