Cod & Halloumi Curry

 2 cod fillets
 1 onion - sliced
 200 g mushrooms - sliced
 1 red bell pepper - sliced
 2 tsp curry powder
 1 tsp paprika
 1 tsp black pepper
 1 tsp onion powder
 3 garlic cloves - minced
 400 g choppped tomatoes
 1 fish stock cube
 60 g low fat halloumi

Slice your vegetables finely and add to a non-stick pan over a medium heat.

To a blender, add the tomatoes, seasonings, garlic and stock cube. Mix until smooth and well incorporated.

Once the vegetables have cooked down and softened slightly, add the tomato sauce to the pan along with 200 mls of water.

Mix well and bring to the boil, then reduce a simmer.

Cut your fish and halloumi into chunks and place into the curry.

Cover with a lid and leave to simmer for 10 minutes, until the fish has cooked through and the sauce has thickened.

Serve with your favourite rice dish and enjoy!
