Coleslaw is such a versatile side dish! Perfect in the Summer for BBQs or inside sandwiches and burgers.
Different foods can added to change the flavour (who doesn't like extra cheese?), and this simple coleslaw can be changed to suit your own taste!

 50 ml low fat creme fraiche
 20 ml fat free plain yoghurt
 1 carrot
 1 spring onion
 1 tbsp mustard
 1 tbsp pickle juice
 1 tsp garlic powder
 1 tsp black pepper
 0.50 tsp salt

This is such a simple coleslaw!
Begin by finely chopping the spring onion and set aside.

Grate the carrot, place in a paper towel and squeeze out any excess water.

Add all the ingredients to a bowl and mix well, making sure everything is fully incorporated.

And that's it! I did say it was easy! The perfect light side for any meal.
