I think these crinkle cookies just always remind me of Christmas! With the orange zest, spicy flavours & fudgy centre - what's not to love?!

 180 g castor sugar
 60 ml vegetarble oil
 60 g cocoa powder
 2 medium eggs
 180 g plain flour
 1 tsp baking powder
 2 oranges - zested
 1 tsp cinnamon
 0.50 tsp mixed spice
 0.50 tsp vanilla extract
 50 g icing sugar

Start by mixing the cocoa powder, sugar & oil together in a mixing bowl. Slowly add the eggs one at a time until they are fully mixed in.

In a separate large mixing bowl, combine the remaining ingredients (bar the icing sugar), then slowly begin adding in your cocoa mixture until a soft dough forms.

Quick tip! If your dough seems too soft, put it in the fridge for 1 hour to firm up a bit!

Heat your oven to 190C and line a baking tray with parchment paper.

Pour your icing sugar into a shallow dish or plate. Taking roughly 20g of the mixture, roll it into a ball, then roll in the icing sugar. Place the balls onto the baking trays, making sure they're evenly spaced out.

Bake in the middle of the oven for 10 minutes , then allow to cool on a wire rack - they will firm up!
