Crispy Chickpeas
Looking for something salty to snack on in the evenings? But peanuts etc all seem so high in calories for what you get.. The solution? These crispy chickpeas!

This recipe couldn't be simpler!
Start by preheating your oven to 220C, and place a rimmed baking tray inside. This ensures that the chickpeas start crisping up right away when they touch the pan!
Drain any liquids from the chickpeas & pat down WELL with some kitchen roll/paper towels. You want them to be as dry as possible!
Toss the chickpeas in the olive oil & salt/pepper (I use 1/4 tsp of both!). Carefully remove the baking sheet from the oven, pour the chickpeas on in an even layer, and return to the oven. Bake for 20-25 minutes, shaking the ray halfway through.
Then simply enjoy! These are best eaten sooner rather than later, as they get less crispy the more they cool.
Other seasonings work just as well! I especially look garlic granules & smoked paprika!
If you want to use an air-fryer for this, then simply follow the same steps as above but bake at 200C for 15 minutes!
