Egg Free Banana Bread
Banana bread is one of those recipes that I always pull out when I'm wanting to change up breakfast! I can bake a loaf, slice it up & have it ready for whenever I need it.
The downside of this is that I'm always running out of eggs! Hence the need for an egg-free version. Plus a major win for those friends of mine who are allergic to eggs! This loaf is just as soft & moist (sorry but it is!) as a "regular" loaf & just as easy to make too.

Preheat your oven to 175C and line a 2" loaf tin with parchment paper.
In a large bowl combine the mashed up banana with the oil, milk and sugar. Make sure to mix this well or you'll be left with chunks of banana in your loaf!
In a smaller bowl mix together the flour, baking powder, baking soda & cinnamon.
Add the dry ingredients to the wet ones in 3 batches, mixing well each time. Keep mixing until it's all fully combined but don't overmix! It's a balance!
Transfer to the prepared loaf tin & place the sliced bananas on top. Press in gently but the bread will rise around them.
Bake in he middle of the oven for 40 minutes or until a toothpick comes out clean.
Pour the maple syrup on top & allow to cool in the tin.
Let it cool down completely before removing & slicing!
