Homemade Pesto

Pesto is notoriously high in calories, but this homemade pesto recipe is less calories and just as flavoursome as it's shop bought counterpart!

 30 g pine nuts
 60 g fresh basil leaves
 2 garlic cloves - minced
 85 ml olive oil
 0.50 tsp salt
 0.50 tsp black pepper

For the homemade pesto, lightly toast the pine nuts in a large pan over a medium heat. They should turn a light golden colour.

Once toasted, add all the ingredients (bar the olive oil) to a blender and blitz until the smooth.

Continue to blend as you add the olive oil until you get the consistency you like.

I like it slightly thicker than the average pesto.

Simply toss your cooked pasta with the pesto and enjoy!

I love having mine with grilled chicken/pork, mushrooms and tomatoes! Full of protein and flavour!
