Mini Cheesecakes
These mini cheesecakes give their full fat cousins a run for their money! Perfectly light, but equally creamy & lower in calories.

For the mini cheesecake bases, begin by blitzing the digestive biscuits in a food processor until crumbs form.
Scoop even amounts of the crumb mixture into the ramekins and set aside.
To a bowl add the Greek yoghurt, low fat cream cheese & sweetener and mix well.
Again spoon equal amount of the mixture into the ramekins.
Eat straight away, or place in the fridge for a few hours to set.
Top with your favourite toppings & enjoy!
