 80 g reduced fat digestive biscuits
 50 ml semi-skimmed milk
 40 g low fat spread - melted
 120 g 0% fat Greek yoghurt
 10 g icing sugar
Optional Toppings
 jam
 melted chocolate
 fresh fruit

For the mini cheesecake bases, begin by lining a cupcake tray with 6 cases/liners.

Blitz the digestive biscuits in a food processor until crumbs form.

To the blitzed biscuits, add the milk and melted spread and combine.

Scoop even amounts of the crumb mixture into the 5 baking cases and set aside.

To a bowl add the Greek yoghurt and icing sugar and mix well.

Again spoon equal amount of the mixture into the cupcake cases, smoothing off the top.

Place the mini cheesecakes into the freezer for 2 hours or until frozen.

Remove from the freezer and pop out of the liners.

Allow to thaw for 5-10 minutes before serving & top with whatever toppings you wish!
