 8 mini tortilla wraps
 250 g lean / 5% fat mince
 50 g low fat cheddar - grated
 1 medium onion
 1 bell pepper
 handful of chopped spinach
 1 tsp garlic powder
 0.50 tsp smoked paprika
 0.50 tsp oregano
 0.50 tsp chilli powder
 0.50 tsp black pepper
 0.50 tsp onion powder
 pinch of salt
 1 tbsp olive oil

Heat a large pan over medium. Add the mince and seasonings, mix well.

Roughly chop the vegetables into small pieces.

Once the mince has browned, add in the vegetables. Mix well until the mince is cooked through and the vegetables have softened.

Take one tortilla wrap and add a quarter of the meat mixture to the centre. Sprinkle with some of the grated cheese and top with another tortilla.

Continue until you've made four quesadillas.

Add the olive oil to a clean pan and heat over medium-low. Place the quesadilla down into the pan and cook the bottom tortilla is lightly browned and crispy, then flip and do the same to the other side.

Once both sides are toasted and the cheese has melted, remove from the pan and continue toasting the remaining quesadillas.

When they are all toasted, slice into quarters and enjoy!
