Mini Waffles

This such an easy waffle recipe that I've used for sweet breakfasts and desserts but also for waffle burgers!

Low in calories and can be frozen and defrosted in the toaster when needed!

 70 g 0% fat Greek yogurt
 130 g plain flour
 100 ml semi-skimmed milk
 1 tsp vanilla extract
 1 tbsp honey
 1 tbsp olive oil
 0.50 tsp baking powder

Add the ingredients into a large bowl and mix well, making sure there are no lumps.
You can sieve your dry ingredients but I've never had an issue with clumping before.

Heat your mini waffle maker (depending on whether it has a non-stick coating or not, it may need to be lightly greased) according to it's instructions.

It's trial and error to see how much batter you need, but I use 3-4 tbsp per waffle.

Once cooked, add your favourite toppings and enjoy!

These can also be frozen and reheated in the toaster so perfect for meal prep!
