Pasta Bake

This pasta bake is a firm favourite of mine! Warming, filling and perfect for a cold Winter's evening.

I like to batch make this and freeze for later!

 300 g dried brown pasta
 400 g canned chopped tomatoes
 2 onion - finely chopped
 300 g mushrooms - roughly chopped
 1 tsp oregano
 1 tsp basil
 1 tsp black pepper
 0.50 tsp salt
 100 g low fat cheese - grated

Chop and grate the vegetables and cheese, set aside.

Preheat the oven to 180C.

Bring a large pot of salted water to the boil and add the pasta.

Cook for 12 minutes until the pasta is softened but still has some bite to it!

Drain the pasta and set aside.

In a blender add the tomatoes, garlic and, 200mls of water and seasonings. Blend until smooth.

Add the vegetables and sauce to the cooked pasta and stir well.

Place the pasta mixture into an oven proof dish, and bake for 40 minutes.

After 35 minutes, remove from the oven and sprinkle the grated cheese on top. Reurn to the oven and cook for a further 5 minutes or until the cheese is melted and golden.

Serve with a side salad and enjoy!
