 1 tsp olive oil
 1 medium onion - chopped roughly
 2.50 medium potatoes - approx 250g
 3 garlic cloves
 150 g frozen peas
 1 tsp fresh mint - chopped
 1000 ml vegetable stock

Heat the oil in a large pot over a medium heat. Add in the onion & garlic, cook until softened & fragrant.

Once softened add in the potatoes & stock. Bring to the boil, then reduce to a simmer until the potatoes are tender.

To the pot add in the frozen peas & mint, cook for 5 minutes. Then using an immersion blender, blend until smooth!

This soup is a vibrant green & perfect as a starter to your Christmas roast, or simply a warming lunch on a cold day!
