Potato Curry

A warming potato curry that can easily be doubled for a quick and easy family dinner!

 1 tbsp olive oil
 1 large onion - roughly chopped
 0.50 tsp cumin
 1 tsp curry powder
 1 tsp lemon juice
 0.50 tsp paprika
 400 g potato - chopped into chunks
 0.50 tsp black pepper
 200 g chopped tomatoes
 0.50 tsp granulated sweetener

Add the oil to a large pan and heat over medium.

Add the onions and cook until softened and translucent.

Then add the spices and keep stirring until fragrant (approx 1 minute)

Stir in the tomatoes and sweetener and mix well.

Cover and leave for 30 minutes, stirring occasionally, until the potatoes are potatoes are tender. You may need to add extra water if it gets too dry, but it's meant to be a dry curry.

Stir in the lemon juice and serve!

Perfect with flatbreads and plain 0% fat Greek yoghurt.
