Simple Granola
This simple granola recipe is perfect for fussy eaters, But you can easily add in some chopped nuts or dried fruits for a little something extra!
I love it as an afternoon snack with some low fat Greek yoghurt and fruit - so refreshing!

Preheat your oven to 120C and line a baking tray with parchment paper.
Add your sugar, honey and coconut oil to a pot and heat over a medium heat, stirring constantly until the sugar has fully dissolved.
In a large bowl mix the oats with the sugar mixture, until all the oats are evenly coated.
Pour the oats onto the baking tray and spread out evenly. Using the back of a spatula press down on oats to flatten them out.
Bake for 45 minutes, removing from the oven and mixing every minute 15 minutes. This is to ensure the oats brown evenly.
Once everything is golden, remove from the oven and allow to cool fully in the baking tray.
Then simply break up into little clusters and enjoy!
