Spinach Fritters

This recipe is perfect for fussy eaters! Chop up (or even blend the spinach) very small and you won't even notice it. Well besides the colour!

These spinach fritters are so low in fat but high in protein, pair with a perfectly runny yolk and you've got a winning combo!

 250 g potatoes
 100 g chopped spinach
 1 tsp dried dill
 1 tsp garlic powder
 0.50 tsp black pepper
 0.50 tsp salt

Peal and chop the potatoes into small pieces and add to a pot of boiling salted water. Cook for 15 minutes or until soft and cooked through.

Remove from the water, mash until smooth, and allow to cool slightly.

Add the chopped spinach and seasoning to the cooled potatoes and mix well until fully combined.

Using your hands mould a quarter of the mixture into a round patty and set aside. Do the same with the remaining mixture.

Heat a large non-stick pan over medium-high heat and add the fritters.

Cook for 5 minutes on each side, making sure to not burn them. Once crispy on both sides and warmed through, remove from the pan and serve with your favourite breakfast food!

These go wonderfully with poached eggs!

For added crispiness, place under the grill for 2-3 minutes on each side!
