These summer rolls make the lightest lunch (perfect for Summer!), and can be filled with whatever veggies or protein you prefer, the options are endless!

 3 sheets of rice paper
 6 seafood sticks (imitation crab)
 3 lettuce leaves - washed
 50 g cucumber - sliced into batons
 1 spring onion - sliced
For The Dipping Sauce
 10 g peanut butter
 1 tbsp soy sauce
 1 garlic clove - minced
 0.50 tbsp light mayo
 0.50 tsp chilli flakes

To begin briefly dip a rice paper in a bowl of water until soft. Remove and place on a dry surface and smoothing it with your fingers.

The begin to layer your veggies and seafood sticks in the middle, like a burrito! I like to start with a base of lettuce, some seafood sticks, then the cucumber and spring onion to finish.

Then the 2 sides parallel and roll up tightly, you can seal with a little water if it needs. This can be a little bit finnicky and takes some practise but it'll taste amazing regardless!

For the dipping sauce, simply mix all the ingredients together & bon appetit!
