 80 g lean mince
 0.50 tsp taco seasoning
 40 g spinach - roughly chopped
 4 iceberg lettuce leaves - roughly chopped
 0.50 stick of celery - chopped
 0.50 spring onion - chopped
 35 g sweetcorn
 1 tomato - diced
 1 tsp mustard
 1 tsp chipotle sauce
 10 g low fat grated cheese
 25 ml low fat creme fraiche
 1 poached egg

Add the mince to a pan and heat over medium.

As the meat starts to brown add in the taco seasoning and mix well, making sure everything is evenly mixed in.

Once cooked through remove from the heat and set aside.

In a large bowl add the vegetables, mustard and chipotle sauce and mix well.

Add to a bowl and top with the mince, grated cheese, low fat creme fraiche and poached egg!

You could also add in some olives and avocado for a twist!
