Tomato Soup
Okay so hear me out, a tomato soup that doesn't involve any roasting!
Sometimes you just want a quick bowl of soup and don't have a bunch of fresh veggies in, so here's an alternative!
This is one of those go-to recipes that is perfect when the fridge is looking a little empty, but is still packed with flavour.

As we're going to be blending the soup anyway, you don't need to worry about chopping the onions too precisely. A rough chop is perfect!
In a medium sized pot heat the spread/butter over a medium heat, then add the onions.
Stir this and let cook for 2-3 minutes. I like to get a little brown on my onions, and if you want a richer flavour, you can continue on to caramelise them but not necessary!
Now add in the stock and chopped tomatoes, stir to combine.
Salt & pepper to taste, then allow to simmer for 20 minutes.
Using an immersion blender, puree until desired texture and enjoy!
